Eggs Harrissa
2 larges eggs
1 small onions, diced
1 large tomatoes, diced
1 garlic clove, crushed
1tbsp oil
parsley to garnish
1- in medium skillet, heat oil, add onions and garlic and stir for 1 minute until soft, add tomatoes and stir for another minutes. Add harrissa, 2 tbsp of water and stir. Simmer for 3 minutes.
2- Transfer the mix into 2 small baking dishes, crake 1 egg on top of each.
3- Heat oven to 180 degree, place baking dishes into oven and bake for 6-8 minutes. Garnish with parsley and serve immediately.
